Sweet Potatoes with Marshmallow Topping

(From the kitchen of Highland Lakes MOM, Maria Rosa Tapia)

Sweet potatoes (2 large cans)
brown sugar
1 stick butter
1 small bag marshmallows
pecans or walnuts (optional)

Place potatoes in baking dish. Chop butter into thin slices and scatter across sweet potatoes. Add brown sugar in abundance, sprinkling over sweet potatoes. Next, scatter nuts (if desired). Top with marshmallows to cover sweet potato mixture. Bake at 350 degrees (F) until marshmallows are melted and browned.
